Indigo Ridge is our best-selling cheese and is aged a full 8 months.  We like to refer to it as a Gouda style with Gruyere flair!  This cheese is a true American Original as certified by the American Cheese Society. It melts beautifully and is a wonderful snacking cheese. Indigo Ridge pairs with everything from strawberry jalapeño jam to ham to sparkling wines to dark chocolate.
